Steak tartare

INGRIDIENTS
(for 4 people)

PROCESS
  • 400g beef tenderloin
  • 3 tbsp olive iol
  • 3 tbsp egg yolks
  • 2 tbsp Dijon mustard
  • 2 tbsp capers
  • 2 tbsp shallots
  • 1 tsp lemon zest
  • 1 tsp pepper
  • 1,5 tsp salt

#1 Clean the beef tenderloin, pat dry with paper towels and remove the silver skin and fat. Cut the meat into smaller square pieces.

How to take a dish to a higher level?

#2 In a large bowl, add the olive oil, egg yolks, Dijon, pepper, salt, grated lemon zest and finely chopped shallots and capers. Finally, add the tenderloin and mix well.

Serve with butter on toasted bread or toast.
